These are sooooo yummy....really dense and fudgy....
350g unsalted butter chopped
450g dark cooking chocolate chopped
2 1/2 cups castor sugar
1 1/2 cups almond meal
2 cups cocoa
10 eggs (not a typo this is actually correct)
2 teaspoons vanilla extract (essence you need half as much again)
Preheat oven to 140c
combine butter, chocolate ad castor sugar in a heavy based saucepan over low heat
mix continuously with a wooden spoon until until melted and smooth
sift the almond meal and cocoa into a bowl add the chocolate mixture and beat until throughly combined on low speed.
add eggs two at a time beating after each addition until the mixture is well combined. do ot overbeat or too much air will be incorporated and the cupcakes will crack (i think this happens anyway!!)
add vanilla extract and beat until combined.
bake for 30-40 mins until a skewer comes out clean (I left mine a little fudgy so they didn't dry out!)
