Book recommendations about Saint Nicholas, for young children?

Lol, I don't think you'll find that then because that is the real story, he was a Saint

I don't know if you'll be able to find anything,but you could try looking for an online shop or something for Father Christmas/Time .... I believe this was the pagan figure for the Winter Solstice The story of St Nick is a lovely one but he was a devoted Christian so you won't be able to escape that side of things.
