my partner is a renderer so I will ask him and get back to you. Do you know what kind of finish you want? so do you want it to as flat as gyprock or have that bubbly/rougher look? are the bricks smooth? are they painted?

Oh cool, Kelebek. That'll be great! We want the smooth look ( don't want any of the bricks or mortar lines to show). The bricks are smooth-ish I guessIt's not painted. Just the normal brick wall. Sorry, I'm not very good at explaining

do not do it yourself! it is painful! speaking from experience ... I've done 2 rooms inside and then got the rest of the place professionally done.
For the time & effort (and your sanity, nails, hands) it is more economical to get it done professionally
