I think dinner and movie tickets or maybe even a show depending on how much you wanted to spend.
Perhaps even a NICE ($50+) bottle of wine (if they drink, people tend not to spend that type of money on a bottle of Plonk normally,

Actually, a show would be good for my Dad... especially if a decent comedian is coming our way. Thanks for the ideas everyone.

I always do GOld Class vouchers and a meal/drink voucher to go with it.
