Both of those sound fine, not offensive at all. If said uncle calls, just say "No, I'm not paying for everyone. Did you not read the invite?" I'd leave it at that.

I like the second one, I think it scans better. And yeah, uncle can pay his own way or eat at home in front of the telly

The second one sounds great
Yeah I agree with the previous posts about your Uncle. It is quite a done thing to pay for your own meal these days. Good luck with the party!

I'd go with the second one too.
You could always use humour in regards to your uncle. You could say "sure I'll pay for yours, if you pay for mine"
