    Sooo many things! Fish in a bag is a winner! (We're having it tonight )

    We do an Asian style one, so grab some spinach or bok choi, place on a big sheet of foil. Rub fish in olive oil, crushed garlic and Ginger and marinate for 10 or so mins in a sauce (I do small amounts of oyster, soy, sugar, maybe a bit of rice wine vinegar or Mirin, or saki, whatever you have around, and a bit of chilli). Place on top of spinach. Add a few bits of lenongrass on top of the fish, you can even stud it a bit for extra flavour. Cut some cherry tomatoes in half and add on top, and a small pile of bean sprouts. Add a small wedge of lemon, some spring onion and seal tightly. Bake as you prefer to bake fish (I really have no idea what I do, just throw it in lol!) serve with rice and steamed veg, yum!

    Or you could steam it, then flake it into a yummy frittata.
