    Grab some baking paper and foil, lay the backing paper on the foil.

    If you have some baby spinach leaves, put a pile of those in the middle of the paper/foil.

    Cut some cherry/grape/baby roma tomatoes in half.

    Lay the fish filet on the leaves, put the tomatoes on top of it, drizzle it with lemon juice, herbs and some lemon zest (if you have it, I use fresh lemon for this recipe).

    Wrap it up, the baking paper means you don't need to use oil etc.

    I usually put it in the oven at about 200 degrees for approx 10-15 mins.

    Mine love their salmon really simple - steamed or baked with a bit of salt and lemon

    We do ours either coated with a heap of Morrocan spice and then pan fried on fairly high heat til crispy on the outside and still a bit pink in the middle. Mmmm those crunchy bits are SO good or else cook the same with just salt and pepper and then make a sauce of light soy sauce, grated ginger(lots!) and some brown sugar. Boil it up and drizzle over fish and we serve with steamed greens. Mmm.
