I was looking for something different to do with veg today, and came across this recipe for corned beef silverside.

1kg corned beef
*1.25l ginger ale

Boil the beef in the ginger ale!



I wasn't sure how it'd turn out, but we've got a dozen bottles of ginger ale and none of us drink it - BIL gave it to us. I tried it out tonight and it tasted really good, it enhanced the sweet flavour of the meat, but wasn't overpowering. Lovely!

*My corned beef was just over 1.3kg, and I ended up using 3l of ginger ale. I probably didn't need that much, ended up with a pot full of ginger ale to throw out, but I didn't want it drying out
