Help! Need quick recipe for casserole beef

John picked up the wrong cut of beef for dinner and I just realised so I need a quick idea for what to make with cubed casserole beef

I also have sweet potatoes, carrot, short crust pastry and other vegies.... not sure what to do with it at this late stage!!! Any ideas would be great!

why not make a thick gravy, put it with the vegies and make a pie?

Chuck it in a big pot add the veggies a tin of tomatoes (if you dont ahve any send John to grab some) a chopped onion or 2 some curry powder (I am addicted to curry powder ATM) some extar liquid if required & let it simmer for a few hours!!!

maybe some worcestershire sauce too...?? garlic... add whatever really!?"??

yep I would second what Danni has said - when all else fails - stick it in a pie! LOL

its nearly 5pm so you wont really have time to let it simmer for too long

I would cover it with flour and pop it in a fry pan in a bit of olive oil with a chopped onion & when browned add 1 cup beef stock, 1/4 cup red wine and salt & pepper and add your veges. Simmer for 30 minutes and then like Danni said, pop it in as a pie. You could do a sweet potato mash & have an orange shepherds pie
