Another thing to do is get the 2 chicken specials when buying chickens to roast yourself, and roast two and shred the chicken of one and freeze it (this is something my mum used to do).
I used to get the roast chooks from safeway in the evenings, when they would be on special, and shred all the meat off and freeze it in lots. I just don't think Safeway do this clearance of fresh foods anymore. ?
Between the Man and I we would sometimes knock over a whole chicken between us, so I don't think I can say you're eating too much! I think a chook between four people is very reasonable.
As much as I love them, I rarely buy them anymore because they just seem so expensive! We always have leftovers, but then there is only 2 of us eating it! I actually buy the chook because I want to make one of those recipes, and then we have leftovers because of it
Can you just get a 1/4 or 1/2 chook? Should give you enough for what you need.
I would much rather buy a couple of thigh fillets or a breast and cook it. For some reason just buying a qtr seems to defeat the purpose. I was not looking for suggestions in that area just really wanted to know if anyone had leftovers with a BBQ chook.
I think the recipes should just say cooked chicken and then in the tips box say "this recipe is a great way of using up leftover BBQ chook"
Sorry about the suggestions. But I do agree, most people don't eat (nor can we buy) turkey sized roast chickens so it's not really helpful. The funny thing is when I was a kid I swear we had more chicken leftover after a roast chicken maybe they shrunk over the years LOL!
