    meat ball/patty recipe

    i thought we would have some chicken mince hamburgers tonight.

    But when ever i cook meat balls or patties they always fall into pieces when i pan cook them...


    any help or suggestions?

    If you make sure you put an egg in it will help bind the mince together. If you can't use egg, soak bread in milk and when its soaked up alot break it up into the mince and really work it with your hands. This helps keep them moist too. The more you work it, the stickier it will get. You want a sticky mix and then shape into patties. Good luck, they sound delicious!!!

    Yep I put an egg and then a bit of bread crumbs. Also cook them well on the first side before turning. Turn the heat down if you need too, but keep it on the first side for a while before turning.

    Chicken meatballs

    500gm mince
    1 egg
    1 clove garlic crushed
    1 carrot finely grated
    1 zucchini finely grated
    1/4 cup breadcrumbs
    salt & pepper

    If you want more flavour... I do this:
    1 tsp grated ginger
    1 tbsp soy
    1 tbsp sweet chilli

    This makes them thai meatballs yum

    Also make sure you mix the mixture well, not too well or it will be tough but often people are too scared to get there hands in there and if you don't tend to the mixture it will fall apart especially if its still got the mincing lines in it, it should be smooth like a dough.
