Could be an additive in them that sets you off - I know friends of mine can't eat Maggi ones because of something in them, but can eat other brands??

Have you tried different kinds of noodles? Most 2 minute type noodles are pre-fried then dried ready to be rehydrated when you add hot water - it's possible that there's something in this process that you're sensitive to. So maybe try some rice noodles or udon or something - good luck
