Phillidelphia with swett chill sauce is my fav!!!
I tend to buy dips from locald deli as they usally have a huge range
I am a bit stuck on homemade hummous that I tweak a bit here or there.
Standard hummous:
1 can chick peas
1 tbsp garlic minced
1/2 lemon juiced
2 tsp cumin
1/2 tsp paprika
salt & pepper
1/4 cup olive oil
Drain the chick pea & rinse. Mix all ingredients together and mix using blender/food processor or barmix. If its too pastey you can add some more water or lemon juice.
Hummous/Sweet Chilli
I mix standard hummous with 1/4 cup sweet chilli.... yum!!!
Hummous/red lentil
1/2 cup red lentils
Put 1/2 cup lentils in saucepan with 1 cup hot water, bring to boil. Let boil for 3 minutes and then turn off heat & cover for 10 minutes. Puree with the hummous mix and add a touch more salt.
My mum does the most simple dip to have with raw veges - all it has in it is - mayo and curry powder..
I have one that we call suprise dip, not sure what its real name is.
You mix a tub of sour cream and cream cheese together and put it in a dish
Then over the top you add a layer of salsa
Then on top of that you put grated cheese and and chopped up spring onions.
It is my all time fav dip, and everytime we go to Mum and dads for a bbq mum makes it for me.
I have the recipe for something similar, we call it the "Secret Dip" LOL but I think it's been around for ages & had many changes on the way but I love it. Takes a bit more time than the easy ones but has been a winner wherever I go.
Here's my version:-
Thinly spread bean dip in shallow platter, combine 1C sour cream, 2/3 mayonnaise & 1pkt taco seasoning mix. Spread this over the bean dip. Mash 4med Avacado's adding 2tbspn lemon juice & spread over top. Then sprinkle on top of that layer chopped capsicum (approx 2 green ones), grated cheese, 2C chopped tomatoes & 2C of chopped spring onions - I mix all of those ingredients before layering ontop. Serve with corn chips.....I love this dip soooo much.
P.s Hope my MIL doesn't find out I just posted this.![]()
i have had simlar to the taco dip above too.
Hommous and walnut dip is my favourite.
This is my mum's version of corn relish dip:
Mix one jar of Masterfoods Corn Relish with a small can of reduced fat cream.
That's it!
Or you could cheat, I have this awsome white platter with a bowl part built in for dip. I spoon a dip out of the packet into that sometimes LOL looks like I made it then!!! Another favourite is tazitki & pita bread for dipping that's been lightly toasted in the oven.
I love the turkish style dips (using greek yoghurt!!)
Carrot - grate a carrot finely add as much garlick as you like cook it all off in some oil until all soft, allow to cool then add to greel style yoghurt!
you can do the same with eggplant, capsicum, beetroot etc!
or my corn relish is the masterfoods corn relish and either philly or lite sour cream! YUMMO!!
A jar of cheddar kraft cheese spread and a jar of salsa (what temp you like) microwave the cheese and slowly add spoonfuls of salsa till you get the consistancy you like, not too much (maybe half a jar of salsa) or it may seperate, keep microwaving till warm. Serve with Doritos YUM!
Cob Loaf Cheesy Dip is one of my faves where you get a block of phili, a cup of mozza, a cup of cheddar, a cup of cream and mix together, add a chopped onion and some bacon if you like and put in a cobb loaf that has had the insides removed. Put in a 180C oven for 40 mins and then put the top back on for another 10, also add the broken insides (bread) around the outside to crisp up to serve. We also serve it with a french stick cut up.
Spinach Dip Cob Loaf:
You need:
1 cup sour cream
1 cup mayonnaise
1 pkt frozen spinach
1 pkt Spring Vegetable Soup
1 fresh cob loaf
Method:
In a bowl mix the thawed spinach, sour cream, onion, vegetable soup and mayonnaise and mix well.
Slice the top of your bread and pull all out the middle of the loaf.
Fill with the mixture, and surround with torn bits of the centre of the loaf which can be used for dipping.
And this spinach dip doesn't have to be served in the cob, I've done it before minus the cobb
And a hot version I like of spinach dip (best inside a cob I think)...
Hot Spinach Dip (I originally got this from a blog called Exclusively Food)
90g baby spinach leaves
80g cream cheese, softened
100g grated cheddar cheese
100g grated Parmesan cheese
100g mayonnaise (whole egg like american mayo def not aussie sweet mayo)
2 cloves garlic, crushed
1 large eschallot/green onion aka spring onion, chopped (use white and green parts)
1 teaspoon lemon juice or white vinegar
Pepper, to taste
Blitz in a processor until combined and spinach is chopped (we don't want puree LOL) then pop in a hollowed out cob and put in oven thats been preheated to 180C for about 20-30 mins keep an eye on it.
Ummm I have some more up here but I'll try and think...
A cob loaf dip
Grab a cob loaf from the bakery
from the supermarket grab:
bottle of egg mayo
sour cream
combine the mayo & sour cream into a container, mix in herbs (my base is all purpose, chili & garlic flakes, fresh chives or thyme), then you can add in whatever else you want - I've put bacon bits in, thrown in some extra cheese.
Cut the top off the top of the loaf, scoop out the innards of the cob, put in the dip, arrange the innards and the ripped up top around the cob & serve. once you've used the innards/lid you can star ripping up the cob to eat it.
