    Fave Dips

    While out at a family lunch for fathers day my DFs Aunt had made dips for before lunch and I fell in love with a few dips she had made and it got me to thinking about our fave dips and their recipes.

    Egg Dip

    4 hard boiled eggs mashed up so still lumpy
    1 bottle of thousand island dressing

    mix together in a bowl and chill until ready to serve with crackers or mini toasts

    Spinach and Pine Nut Dip
    (not sure of exact quantities)

    1pkt of frozen spinach
    pinenuts
    french onion soup pkt
    cream cheese (i think will find out)

    Mix together in a bowl and chill until ready to serve

    Good old cheese n chive in a tub...hehehe. I'm a bit lazy sometimes. Although, I will do a cheesy cobb loaf dip...Does that count...lol

    This is a thread for ME! I am a bit famous around the traps for my dips; I give out the recipes for Christmas gifts.

    Spinach dip:
    Toasted pine nuts (1 handful)
    Frozen spinach (1 cube)
    Garlic (1 clove)
    Fat free Natural yoghurt (2 dollops - can use silken tofu + vinegar for vegans)

    Avocado, Lime and Wasabi Dip:
    1 avocado
    lime juice
    small splash sesame oil
    squirt wasabi (I am always amazed at hor much I have to add before you can really taste it)
    small splash olive oil
    I use a food processor to get this one nice and smooth.

    Kidney bean dip:
    1 cup cooked kidney beans (can use canned, rinsed)
    1 spring onion
    1 sprinkle ground cumin
    1 sprinkle hot parpika
    1 tomato, chopped
    olive oil
    lime juice
    (alternate olive oil and juice until right consistency)

    Eggplant Dip:
    1 eggplant. Cut in half lengthways, wrap in foil, put in oven on high for about 1 hour. I forgot about it once andleft it for over two, best dip ever!
    1 handful cashews
    olive oil
    small handful parsley
    lemon juice.

    Broad bean dip:
    1 cup broad beans, shelled
    1 clove garlic
    1 handful toasted pine nuts
    Parmesan cheese (optional)
    Olive oil (enough to get consistency)

    Pea and rocket pesto:
    1/2 cup peas
    1 cup rocket
    1 clove garlic
    olive oil
    1 handful toasted pine nuts (we use a LOT of these in our house)
    1/4 cup soaked chickpeas
    Parmie cheese (optional)

    Hommus:
    cooked chickpeas
    cumin seeds
    coriander seeds
    tahini
    garlic
    lemon juice
    olive oil
    water
    sesame oil (teeny amount)

    The following is cheap and always a winner.

    Impoverished Uni Student Dip

    1 tub sour cream
    1 pkt Tacco seasoning

    Mix and serve with chips or crackers

    Macca79 - I make a dip like that, but add tomato, shallots and cheese on the top.
    It's yummmmmmmmmmmmmy!!!!!!

    My DH loves this:

    Cheese & Mayo Dip (don't know the quantities .. just throw in as you like)

    Finely Grated Cheese (Mild Chedder is best)
    Finely Grated Onion
    Some Peach Chutney
    Some Mayo (about equal amounts as the chutney .. just to wet the cheese and make it "dippable")
    A pinch of Dry mixed Herbs
    and a dash of paparika

    Mix together nice and lumpy ... spread on crackers, dip for vienna's, any cold meat or chips. It's lovely for toasted BBQ sandwitches
