I think it is personal choice. Australian industry does not really allow non-pastuerised cheese (the bigger brands like South Cape etc) & listeria cannot survive the pastuerisation process so there should be no risk at all as long as the cheese is firmly within it's dates etc. You will find all of the 'soft cheese' are pastuerised (but not so much through the smaller specialised deli's who make thier own)

Feta is absolutely fine.
