oooh I made these the other night! it was just the best thing ever after avoiding them for so long! (and even having to order udon noodles while watching my friends scoff down the sushi train!)
I made them extra unhealthy by adding lots of kewpie mayo. *droool* I love that stuff! Was so thrilled to find it in coles!

when you get back from coles...

make your sushi rice according to packet instructions (wash it well first, so use a little less water)
add the sushi seasoning (you can make it out of sushi vinegar, sugar and salt, or buy it in a bottle)
spread seasoned rice out on a tray (not metal) and cool it down with electric fan or by fanning it with something

get your seaweed sheet carefully onto the bamboo matt. spoon a few big tablespoons of rice onto to seaweed
wet your fingers (really well!) from a bowl containing water with a splash of sushi vinegar
press the rice out about 0.5-1cm thick (try to make it even) on the seaweed, leaving about 2 cm at the top

in a line at the bottom of the rice, spread your fillings (not too much or it wont close) I used cucumber and tinned tuna mixed with mayo (tinned tuna is safe but dont eat it too often in your week cos of mercury buildup)
roll really tightly using your mat. Its like rolling up a sleeping bag, best if you sort of tuck as you roll. The first bit is the trickiest.

use a lot of water/vinegar mix on your spare cm of seaweed to stick it down to the roll
the trick i tried this time was to wet my hands and rub it all over the outside of the finished roll. This softened the seaweed a bit more and stopped it being too tough on the outside.

serve with mayo and soy (and wasabi if you're that way inclined!

    Y.U.M!!!
(ok now I'm totally going to have that again this week!)

I prefer the seaweed on the outside too!
I still haven't made mine yet.... the strong cravings I had when I made this thread, passed thank goodness!! Although I do still get envious of DH and DD when I see them eating sushi rolls.....Mmmmm I still should make some, I have all the stuff just have to buy the fresh ingredients!!

Have you guys seen those sushi roller things you can buy? makes rolling them so much easier, what a great idea.

Ive had huge sushi cravings this pregnancy too! Ive heard that its not only the raw seafood, but also the rice that can contain harmful Listeria as it has been cooked and then cooled down. I think if you want sushi so bad, do what i do and go to a sushi train restaurant where they are made fresh right in front of you rather than a take away place

That has got to be better than the premade ones sitting in the window, but I'm still too paranoid for that. They still cook the rice well in advance and leave it sitting there cold. At least when you do it at home you know you made the rice fresh...
