I don't have kids to send off to school (yet) but I do pack DF's lunch lol (close enough) I also used to do my little brothers a few years ago. I pop in a bottle of water, a small container of fruit salad (whatever fruit is in season, usually chopped up banana, apple, orange and grapes) dry biscuits, like saladas, with cheese, celery sticks w/ peanut butter, salad sandwich (avocado, lettuce, grated carrot and beetroot,mayo) and sometimes a treat like one of those sesame bars.
Or with DF, leftover pasta or anything else from the night before, but that's not really practical for school lunches.
(Also when I was doing my brothers lunches, he had a fruit break too, he didn't tell me about it for a week, so I didn't pack any extra fruit for it)
Oh and as for sushi (lucky DD lol) I think you can buy those containers you get when you buy sushi from some asian supermarkets, and maybe even some normal ones (or alternitively, you could just ask next time you buy sushi for some extra ones?) and just re-use those to carry the sushi, so it's not rolling around a lunchbox and falling apart

DS gets a piece of fruint for munch and crunch. ( fruit and water at 10 am during reading time )
then recess is usually a packet of chips, popper, cheese and saladas. lunch is a sandwhich nutella usually as he is fussy and wont anything else, and some lollies and another piece of fruit and his big bottle of water.
we send it to school in an insulated lunch box with a frozen popper, so its thawed by lunch or slushy style and he enjoys that keeps everything cool.

You can do sushi sandwiches (I do them all the time!) but I would probably not do actual sushi for fear of tummy upsets. My daughter would be in heaven if she could have sushi every day. Instead I take it up to her fresh from time to time!
DD1 takes a homecooked muffin/"healthy" cake or home made muesli bars, 2 pieces of fruit, a frozen popper now that its warm, a samwich/leb bread roll and a small container with some cut up vegies for their munch crunch time at school.... such as a cucumber and some cherry tomatoes.
Occasionally I give her something in the thermos for lunch, like leftover spag or fried rice. Great little investment that was!
(munch crunch time at her school is where they have silent reading for 15 mins and are encouraged to eat something healthy)
and of course a bottle of water
We have "Crunch and sip" at our school at 10am. It is a great idea considering alot of kids eat breakfast at 7:30am. It is a long time until morning tea but they are only allowed fruit or some sort of veg (like carrot sticks or cucumber sticks, etc)
I have seen all types of things in kids lunch boxes. Alot of kids these days have these flasks that keep food warm or cold with sushi or leftovers in it.
Sandwiches are all good still.
Some kids have a lot of junk and believe it or not, alot of them leave it in their lunch box and dont eat it.
Maybe something littel for recess like some cheese and crackers, or a bar, or little muffin or cake. Recess isnt long and when they are so little they take FOREVER to eat! So keep it simple and small.

My girls usually take the same thing each day - they're a little fussy with the food they take to school.
I usually pack them:
some yoghurt, jatz and crackers, a sandwich (they like good old vegemite) some grapes and rockmelon, rice cookies. Sometimes they take some natural popcorn, pikelets with honey or a home made patty cake. They also take a bottle of water.
