MIL bday tomorrow , i always take something iv made when ever we visit, i would like to bake a cake or slice muffins etc anything really.
We have to drive about an hour and a half there, so it would have to keep in a container till we get there.
what should i make ? i dont mind what it is , i just want some new ideas that will impress them :ROFL::ROFL:
Sticky chocolate brownies
Cheesecake (baked ones are best served at room temp so ok to travel in ur container)
Chocolate marble cake
Butterfly cupcakes

For my MIL's birthday I baked a sponge cake with cream and jam in the centre (her favourite).
For my mum's birthday, I baked a chocolate sponge cake with a coffee syrup topping.
mmm brownies sound good.. anyone have a good recipe? iv never made them before :o
If you want to knock the socks off them, buy a block of cadbury milk cooking chocolate and on the back is a recipe for a mud cake. It is absolutely divine and really easy to make. Top it off with a dark chocolate ganache and then melt some milk or white choc and dizzle across the top.
Or I have a kick-ass recipe for a lemon meringue baked cheesecake.

Are cookies to immature for this get together?? Probably if you're trying to be flash BUT I just love Cookies and have an amazing recipe for Choc Chip & Peanut Butter Cookies which are ALWAYS requested and raved about round here - They'd keep well for the trip, otherwise I think a slice would go well - Mmmm Coconut Slice... Or Hedgehog Slice, Brownies, Peppermint Slice, Cherry Ripe Slice, Macadamia Slice... I a quick and easy kind of baker :) Argh you're not doing any favours for my 12 week chalkenge with this thread haha! Muffins would travel well too, I don't know wbaout you but I am always nervous about travelling with a big iced nicely decorated cake... Would probably be fine but just me I guess.
I don't know why but i can bake all these fancy things and they turn out great but every time i make cookies they don't cook well, they either burn o the bottom or don't cook right ... I don't know what i am doing wrong there
Lemon Meringue Cheesecake/Pie
1pkt Nice biscuits, crumbled
125g butter, melted
500g cream cheese, softened (this is two pkts - I only make it with 250g otherwise it is SUPER rich)
zest and juice of 3 lemons
2 cans condensed milk
3 egg yolks, whites reserved
1/2 cup castor sugar.
Preheat oven to 180c. In a bowl. combine the biscuit crumbs and butter and then press into the base of a 24cm springform pan, lined with baking paper.
Beat the cream cheese, condensed milk, lemon juice, zest and yolks until smooth. Pour the mix onto the prepared crust. IN a perfectly clean bowl, beat the egg whites until stiff and gradually add the sugar and beat until the sugar is completely dissolved and the meringue is thick and glossy. Spread the meringue over the top of the lemon mix. Bake for 30 minutes or until loghtly browned. Chill before serving.
Are you overcooking them maybe? Cookies will still cook a little once you take them out of the oven, so if they feel soft (sometimes too soft at first) when you first take them out of the oven, they will usually harden up as they're cooling.:

I was going to say the same as Jodi regarding over cooking biscuits. I used to do the same thing... over cook... until i followed a Mrs Fields white chocolate and macadamia nut recipe. I followed it to the letter and was very surprised to note that when i took them out of the oven they were soooo fragile. But i let them cool as per the recipe and sure enough the sugars "set" and made the biscuit firmer when at room temp. I also now use baking paper a lot... helps the bottoms stop from going too dark.
OMG that lemon meringue pie sounds good! So have to make that this weekend!
There was an ANZAC slice recipe on here last week which was great. I made it on the weekend and it went down a treat. Dh came up with the idea of putting jam in the middle, so I thought I'd give it another go with half the mix patted down, then a layer of jam, then the rest of the mixture. I suppose you could also put a chocolate icing layer on top if you wanted to jazz it up.
It would also be easy to carry once it's set. I love it cos it's still soft in the middle even when set.

Yeah i think thats what i am doing wrong with the cookies and biscuits , i think they need more in the oven when they would actually firm up if i take them out
