Hemming vinyl?

I thought I might buy some vinyl to make an easy-to-clean floor covering to put under the highchair for when DS starts solids. But, I had a thought....how am I going to hem it? I can't very well fold the edges down and iron it flat can I?

Has anyone sewn with vinyl before?

what about the clear plastic sheeting you can get on a roll at spotlight - then you dont need to hem anything.
