I love this - it's so yummy and makes a good side dish.

1 onion, chopped
2 cloves garlic, crushed
1 cup basmati rice
2 cups chicken stock

Saute onion in a little water (I just use some of the stock). Add garlic and rice and stir. Add stock and bring to the boil. Transfer mixture to a baking dish, cover and bake at 180C for 30 minutes. Remove from oven and fluff rice with a fork.

Optional: stir through a knob of butter and some chopped parsley if desired.
