I think feta would be really good in them - I don't have any of that either though lol

In the fridge at the moment I have mozzarella, cheddar, and Philly (stuff to make the cob loaves ).

Actually maybe the cob loaf filling would go really good in the middle of them *shrugs*

I am so un-creative in the kitchen lol I never take any risks with anything

Im doing brunch this year at ours for the In Laws (oh joy!)
Im doing very quick and easy nibblies so that I can enjoy the day with the kids as well and not be stuck in the kitchen. Lets face it, its probably going to be hot, so this mama needs to be in the pool with a ****tail!
On my menu are the following......
    Sweetie:
    Mini Choc mint cups
Choc pudding ice cream in brandy baskets
    Savoury:
Water crackers topped with onion jam, slither of fried mushroom, curl of cooked red capsicum, small white bocconcini ball (not sure what other cheese to use actually??!! HELP!) and a sprig of parsley (or other fragrant green herb available) Fiddly, but its the only dish that is I can handle it.
Garlic/thai etc prawns served on individual toothpicks...DP does this, I HATE seafood!!
Warm turkish bread with three different dips

Ash - I reckon you could do a mix of those cheeses (for the cob) together instead of the goats cheese!
