    - I LOVE bacon and egg pie - looking forward to reading some of these recipes. I cant add mine, as it still in storage. But as soon as I can find somewhere here (northcote/brunswick) that sells free-range bacon I will be making some (i remember the basics).
To me it has to have free -range eggs and bacon!!!

Do you mean like a Quiche (or Man pie )

I get Puff pastry and line a pie/quiche dish and blind bake it til it slightly browns... you may need to ***** areas when you pull it up to deflate the puff... allow to cool

Fry - yes not that healthy but yummy, bacon in some butter (or oil if you are trying to be good.)

    Add bacon to pastry base
Chop some spring onions in to the base
sprinkle with some cheese (i use goats cheese sometimes for a really creamy yummy taste - i just like it in blobs)
crack 4-6 eggs in a bowl and whisk.Add salt and pepper to taste.
Add either some milk or light condensed milk for a creamier taste and beat
    Add to pastry base.

chuck in the oven at 180 until cooked

    Easy peesy and yummy

ETA - i only use free range eggs - never seen FR bacon but could you please PM where to buy this as i would get that too

    Hi Trish!

    The recipe I use:

    Ingredients:
    250 grams short cut pastry
    6 rashers bacon
    6 eggs
    Chopped parsley
    Pepper and salt

    Method:
Line pie dish with 1/2 of the pastry.
Chop the bacon and place it on the pastry.
    Break eggs over the bacon.
Sprinkle with salt, pepper and chopped parsley.
Cover with remainder of the pastry.
Glaze with egg and milk and pr!ck well.
Bake for 10 mins in a hot oven, then 20 - 25 mins in a moderate oven.

I haven't made it for ages, think I will soon

There are a few companies in NZ where I have moved from that sell it. You can get it at the supermarket there. Im still struggling to find free-range meats here, (but have not been here long so still need to keep looking) but if I do find some bacon I will PM you the details. Otherwise, no B&E pie for us for a while - though this thread has got me WANTING IT NOW!!...but pregnancy might be adding to that

Hmmm yum, its just so good and tastey - its like a comfort food isnt it? I still have happy memories of it as a kid.

These things are called breakfast muffins, but they look more like little open pies to me! I got them out of the coles christmas thing last year, and saw them the other day.

    6 slices bread, crusts removed
3 rashers middle bacon, finely diced
    3 cherry tomatoes, halved
    6 eggs
    1/2 cup grated mozzarella cheese

Preheat oven to 200c/180 fan forced.
Press bread slices into a greased 6 x 1 cup 'texas' muffin pan.
Sprinkle equal amounts of bacon in the base of each.. Place a cherry tomato half in the centre over the bacon. Break a whole egg over tomato and bacon.
Sprinkle with cheese and bake for 20-25 minutes or until egg has set.
