You should be able to freeze it without any problems, cos its already pureed. Just put it into ice cube trays and freeze it. When its frozen, pop the cubes into a freezer or zip lock bags and keep them in the freezer for when you want them.
Also I would make muffins....a gallon makes a lot of ice cubes!
Muffins, Bread, Cake, Pikelets and don't forget banana chop chip cookies or apple & oatmeal cookies And if you want to save it for baking later on you can freeze it in zip lock bags rather than ice cubes.
