My first thought was to make fruit flavoured muffins or banana bread with it. Then you can freeze those or give them away to friends and families or sell them at the markets????
You are probably never going to want to see banana and apple puree ever again after you finish this one lol!!
You should be able to freeze it without any problems, cos its already pureed. Just put it into ice cube trays and freeze it. When its frozen, pop the cubes into a freezer or zip lock bags and keep them in the freezer for when you want them.
Also I would make muffins....a gallon makes a lot of ice cubes!
Muffins, Bread, Cake, Pikelets and don't forget banana chop chip cookies or apple & oatmeal cookies And if you want to save it for baking later on you can freeze it in zip lock bags rather than ice cubes.
