Recipe looks easy enough (famous last words)
300g castor sugar,
Juice and zest of one unwaxed lemon
500g ripe, hulled strawberries, quartered
2 handfuls of fragrant, unsprayed rose petals, washed
1 tsp citric acid.
Put sugar into pan with 300 ml of cold water.
Using a veg peeler pare the zest from the lemon and add to pan along with the squeezed lemon juice.
Set the pan over a low to med heat, stirring occasionally to dissolve the sugar, then bring to the boil and simmer for 2 mins
Remove the pan from the heat and add strawberries, rose petals and citric acid. Gently crush the strawberries in the pan with the back of a spoon. Leave fruit and petals to steep in the syrup for about 4 hours.
Strain cordial through a fine sieve or muslin, pour into sterilized bottles, seal and label. Refrigerate until ready to use, should keep in the fridge for a couple of weeks.
