    Is active dry yeast the same as instant yeast?

    I don't know if the yeasts are the same, sorry! We make bread and/or pizza dough at least twice a week in this place, but without recipe, we do it by feel. Here's what we do:

    Dissolve 1 sachet Instant Yeast in a cupof hand-warm water, with 1tsp sugar.
    Give it about 10 minutes to froth up.
    Dump about half a kilo of flour into a large bowl, and make a well in the middle.
    Using a fork, gradually work in some yeasty water until you get the consistency you want. Should all come together, and be a little bit springy. Use more water if you want to, or more flour (not too much more, or you'll need more yeast)
    Flour your bench top, and then get into your therapeutic kneading! About 10 minutes usually does it.
    Put your dough ball back in the bowl, cover with a wet tea towel, and put it in your sink.
    Plug the sink and fill with warm water so it reaches about halfway up the side of the bowl.
    Leave to rise for 30 mins-1 hour
    Take dough out and knock it back a little bit (tiny bit more kneading but not too much.)
    For loaf, put it in your tin, let it prove for about 10 mins.
    For pizza dough, put it on your tray and build your creation.
    For freeform, form it on your tray, score the top.
    Bang it in a hot oven until it's golden and looking ready - 15-20 mins, depending on all sorts of things.

    And there you have it - Bread Snuggly Style!

    ETA: No I'm not. We're out of yeast. GrrrrrARRRGHH!
