    broccoli

    ok, who's up for a challenge?

    the only vegies i have in the house is some frozen broccoli..aslo have some chees and some rice.

    Any suggestions with the least amount of chopping for additional ingredients?

    I'll be back in a sec with a more detailed recipe. I usually make mine with broccoli, cauliflower and carrot.

    ETA:

    Sauce

    - 2 tablespoons butter
    - 2 tablespoons flour
    - 1? cups milk

    Melt butter in a small saucepan over a low heat and stir in the flour, cooking for 1 minute. Remove saucepan from the heat and gradually add the milk. Return the saucepan to the heat and cook, stirring continuously, until sauce boils and thickens.

    Boil your Brocolli (and any other veggies) to desired tenderness and put into an ovenproof dish. Cover the Broccoli with the sauce and cover with cheese. Cook for about 30 minutes in a 180C oven.

    How about rice with broccoli covered in grated cheese? :P

    Detach the florets from the stalks, don't discard the stalks
    Boil in salted water until just tender when prodded with a fork
    Drain well, break the florets into smaller pieces and cut the stalks into large dice
    Put a 3-4 tablespoons of olive oil into a saute pan over a very low heat
    as the oil starts to warm up then add some chopped anchovies and mash them into the warm oil with a spoon until they dissolve
    Turn up the heat, add the broccoli along with some chopped chilli and cook for 4-5 minutes ensuring everything is coated with the flavoured oil
    Toss the contents of the pan with some cooked pasta, then grate some parmesan and whatever other cheese you have to hand into it and serve.
