I do! Massively popular in this house. Utterly delish!
Recipe for 1kg Chicken.
1/4 Cup Plain Flour
2 1/2 tbsps olive oil
1 Onion (Chopped)
1 Tsp Minced Garlic
1 400g can of Diced Tomatoes
1 cup Chicken Stock
Parsley, Oregano, Salt & Pepper.
Coat chicken in flour, shake off excess.
Heat oil in fry pan and cook chicken until well browned. Remove and set aside.
Add onions and soften. Add garlic and mix.
Return chicken and add tomato and stock.
Increase heat to bring to boil, then reduce and simmer uncovered for 25-30m.
Stir in parsley, oregano, salt and pepper and cook for a further 5 minutes.
Served on pasta.
sounds yummy - do you use chicken fillets?
I use whatever redlea have on special for the week. We have drummies this time. If you do get bone in, make sure its cooked through before serving, but it doesnt hurt the mix at all to leave it on the heat for extra time - just cover it so it doesn't completely boil off.
I also make sure I have removed all the fat before I cook, so fillets are good for that. It really works with anything but a whole roast, lol.
I do a dish similiar to cacciatore in the slow cooker,
I throw into the slow cooker:
diced chicken fillets
Chopped onion
garlic
spag sauce
1 cup chick stock
2tbls basil
1 tbls rosemary
1 tbls sugar
you could add olives if you like or whatever else.
I give it a stir then chuck it on low for 6 hours or high for 3 hours or so
this is just how I do it, not an actual recipe so play around until your happy. It tastes awesome.
