... Do I just heat up the sour cream with mushrooms (or cook the mushrooms 1st ??) & add a dollop of basil pesto ?? ... Do I pan fry the chicken, & if so, is it better to cube (diced) in small pieces or doesn't it matter ??

Mushroom and chicken -
Brown some chicken and a bit of onion, chuck in mushrooms with garlic and cook them until soft then stir in some sour cream and pesto and salt to taste and pour over fettucine.

Been thinking of you a lot !!! I so hope you have enough support there !!!

... Well, I made GRACIE's " puff pastry parcels" (THANKS GRACIE ). I had two sheets & filled each with pan cooked diced chicken & chopped (from jar) sundried tomatoes (I was worried if I put too much it would be soggy BUT in fact I could have put alot more sundries tomatoes) & then slivered cheese ... Sadly I hadn't done the grocery shopping (usually I have grated cheese) & only cheese I had was 2 slices of cheddar so could have put another 1 or 2 more slices if I had I think it was about half a chicken fillet in each parcel.

I cut a parcel in half & DP & I had a half each ... and had the other parcel wrapped in foil heated the next night in the oven. I actually reckon it tasted even nicer the next night

So, the "puff pastry parcel "- Half of one was like a side dish on the same plate (I loathe washing dishes,LOL) ... AND made Mrs26 " chicken pasta dish" with the help Of DACHLOSTAR (THANKS TO YOU BOTH Mrs26 & Dachlostar ) as the main dish.

I had fettuccine ... and I made the pasta sauce consisting of Sour Cream, Basil Pesto, chopped Onion, heap of sliced mushrooms & 2 cloves of crushed garlic & bit of salt (Um, ... so nice we had seconds )

... Was absolutely so YUMMY, & Adam even took some leftovers to work for lunch the next day !!

WILL BE MAKING BOTH AGAIN !!!!!!

I'm gonna make SNOOPEA"S "Chicken Pie" next week, yeh - sounds so good
