Can I please have lemon slice recipee
.... well they are setting in the fridge as we speak... i just halved your recipe Leasha & yeh made a few with rum in 'em for just DP & i and some only choc ones for ALL 3 of us
Riv ... i'm the same i get an instant headache at the thought of it until i tried it in a saucepan with butter melted for the slice i made, ooohh Yum !! Thanks for that, that's good to know about freezing the lemon slice (only i had no lemons left to make more today)

*** smile4u lemon slice recipe ***
- 1/2 Cup sweetened condensed milk
- 100gr butter
- 200gr Granita biscuits (i have used Arrowroot & Marie biscuits which taste fine but Granita has a bit more taste to the base) ... NOTE : a pkt of Arnotts Granita biscuits are 250gr so i take a few biscuits out of the pkt)
- 1 Cup desiccated coconut
- 1 large Lemon, rind finely grated
- 1 teaspoon of ginger powder (optional)
+ Lemon icing +
- 2 Cups of icing sugar, sifted
- 40gr butter, softened
- juice from lemon that you used for biscuit base
Method ;
1. Grease & line with baking paper a biscuit slice tin (approx 15.5 x 25cm), make sure paper hangs over edges for easy access later.
Place condensed milk and butter in a small saucepan over a medium heat until butter is melted.
2. Finely crumb biscuits (either in a food processor or in a large plastic bag rolled over with a rolling pin).
3. In a large bowl combine crumbs, coconut and 2 teaspoons of finely grated lemon rind then add hot butter/condensed milk mixture. Stir until well combined.
4. Press biscuit mixture into prepared slice tin with either your fingers or back of a steel spoon.
5. Refrigerate for 1.5hours or until firm.
#Method of Lemon Icing#
Place sifted icing sugar, softened butter and 2.5 (two & a half) tablespoons of lemon juice in a bowl. Beat with a wooden spoon until spoon.
Spread icing over biscuit base and refrigerate for a further 30mins or until icing sets.
Cut into pieces (i cut into small rectangle/finger size pieces as it is a rich slice & you can always go back for more).
>>> I prefer the hint of ginger taste in the biscuit base, it's not overpowering. Also i prefer the look & taste of desiccated coconut sprinkled over the spread lemon icing.
It may appear to be not enough icing but for me it's ' just ' enough to spread ... so you can always make more icing if you prefer.
