Hi,
I need some ideas and recipes for foods that i can cook in bulk, seperate and freeze for when i have our baby. I have a husband who only eats chicken/mince and a three year old daughter to prepare for. Other then spag bog i cant think of anything else
Meatloaf? I make mini ones in a muffin pan that freeze well. Does your DH eat sausages? devilled or curried sausages freeze well too. Does he eat chicken stir fry? I found having frozen chicken strips, a bag of frozen stir fry veges (the Aldi ones are great) and a jar of sauce quick and easy with very little prep or cooking time (I even use the lazy pre cooked microwave rice)
Lasagne, Minestrone soup, Chicken curry and rice, chili and rice, meatloaf, chicken and veg soup (with lentils or barley, if you want), chicken stew, mince pies, chicken pies, shepherd's pie. Keep bags of frozen veg (broccoli, cauli, peas) on hand to microwave to add some colour to the plate.
Ummm.....
* breadcrumb chicken fillets for schnitzels, parmas, nuggets (freeze flat between clean cereal bags which are a lot more sturdy than glad wrap, and reusable, once frozen, put into freezer bags.
* slice chicken for stir fries, freeze in quantities to suit what your family will eat, plus a coupls of of lunch serves for the fridge for you (and dh if he csn take it for lunch to work),
* buy a range of vegetables that you like for stir fries, chow mein, etc. Chop them all up, and divide them up into containers to just grab one container to uae for a meal. In our house, this means a four litre ice cream container, to which i also throw in some frozen veges from packets. Then, to cook a meal, just grab one portion of meat and let defrost in fridge, grab the veg container out while you're cooking, and whatever sauces you like from the fridge, while rice is also cooking.
Can't think of anything else ( ), but if you're getting into stocking your freezer up, be sure to write a list, and more importantly, keep it up to date, with what goes in and the date, the number of portions, and cross it off when it comes out. That way you can peruse the contents whilst feeding baby and write shopping lists from the comfort of the lounge.
Just a tip - get yourself a vac sealer! That way you can freeze, defrost and cook in the bag, they can go in the microwave or in boiling water. Heaps better than containers as food lasts much longer when it's vac sealed.
As for food - we always do a big batch of spaghetti sauce, lasagna (beef and a chicken one), a couple of different soups, zucchini slice, gnocchi bake, beef strog, chicken and mushroom casserole...that's all I can remember just now.
Schnitzel
Savoury Mince
Curry Mince (doesn't have to be hot n spicy)
Curry chicken (again, only very mild in heat)
Burgers
Pizzas (Spag Bog pizza is a huge hit here! You literally cook spag bog, then toss (the most fun part!) onto piza base, cover in cheese and melt!
Spaghetti Bog
Chicken Lasagna
