The only reason we have any to freeze is because I've made 4 carrot cakes with the huge number of carrots DH pulled out of the garden over the weekend. Normally we would never have leftover cake. It's practically unheard of in this house lol!
Yes, you can freeze cream cheese icing. Freeze the cake uncovered, then wrap very well so no air can get to the cake/icing. Let cake defrost in the fridge. I would probably freeze them uniced, but its up to you. Yum, carrot cake!
It's fine. I have frozen portions of red velvet cake with cream cheese icing unwrapped in containers. Just thaw out on bench over several hours . Tastes perfect!
You can... but why would ya I swear my DH and kids would devour a whole bowl of it before I can wash my hands and come back to ice a cake. I have to guard it with my life!
