    Yes, you can freeze cream cheese icing. Freeze the cake uncovered, then wrap very well so no air can get to the cake/icing. Let cake defrost in the fridge. I would probably freeze them uniced, but its up to you. Yum, carrot cake!

    Yes, we've frozen iced carrot cakes before and they have thawed fine.

    It's fine. I have frozen portions of red velvet cake with cream cheese icing unwrapped in containers. Just thaw out on bench over several hours . Tastes perfect!

    You can... but why would ya I swear my DH and kids would devour a whole bowl of it before I can wash my hands and come back to ice a cake. I have to guard it with my life!
