Ok this is an adapted recipe that was in this month SFI's mag... (they did pies I do parcels I also added some yummier stuff LOL)

500gms Chicken Thighs, cut into cubes
250gms Mushrooms, sliced
1 leek, diced
175g Bacon, diced
2 sheets puff pastry, cut in half
1/2-1 tsp dried thyme
1/2 - 1 tsp garlic powder
250mls light sour cream
1-2 tsp dijon mustard

(I varied the amounts as it depends on if you are cooking for kids or what your likes are)

Cook the chicken in batches, then set aside in a dish. Cook the bacon and mushroom till brown, re-add chicken cook for a minute (make sure its on medium to low heat). Add sour cream, mustard, thyme and garlic powder. Once combined allow to cool. Once cooled spoon mixture into puff pastry and make 4 parcel shapes however you see fit (I am hopeless with pastry LOL!).

Wash with egg (or milk) and cook at 220C for 20-25 mins or until puffy & golden.

Serve with creamy mashed potato and the vegetable of your choice.

Alternate versions: Put in 1 cup ramikins and top with puff pastry... or buy shortcrust base and blind bake, put filling in and top with puff pastry and cook. Or if you are super special use your piemaker
