    spicy chicked meatballs

    ha ha..that should read spicy chicken meatballs!
    Anyone got a recipe?
    DH doesn't like subtle flavours or aromatic hers etc, everything has to be spicy!

    Rachael, so you have a slow cooker?

    I do mine in a slow cooker, but just as easy on the stove top:

    Chicken Meatballs

    Meatballs

    500g chicken breast &/or thigh mince
    250g Italian sausage
    2 eggs
    1/4 cup of milk
    1/2 cup dry breadcrumbs
    3 tablespoons sweet chilli sauce
    1 teaspoon paprika
    Salt and crushed black pepper

    ~ In a bowl, beat eggs and add milk.
    ~ Add chicken mince and Italian sausage & mix together.
    ~ Add rest of ingredients and mix until combined.
    ~ Shape the mixture into 2cm balls and place on a greased baking sheet.
    ~ Bake at 180`c for 15 minutes.
    ~ Add to crock pot.

    Sauce

    1 tin chopped tomatoes
    1 small tin tomato paste
    1 tabslespoon tabasco sauce
    1 small onion chopped
    1/2 green capsicum, diced
    1 cup chicken stock
    1/2 cup white wine (or additional stock)
    1 teaspoon sugar

    ~ Mix all ingredients together and pour over the meatballs.
    ~ Cover and cook on Low for 4 - 5 hours.
    ~ Serve with spaghetti & green salad.........

    Thanks Lucy! Yes I do had a slow cooker, I han't thought to do them in there, so I will get it out give them a go!

    With the italian sausage, is that like regular sausages, where you peel the sausage? Or something else?

    I use Italian sausage meat from our local deli usually, but on other occasions I have bought fresh Italian sauages & skinned them and used the meat.....think really chunky red spicy italian sauage meat........

    (That recipe is very forgiving BTW.......you can fiddle about with it a fair bit........it also makes enough meatballs for 2 meals for us, and tastes better the next time round IYKWIM?)

    These were awsesome Lucy and went down a treat with DH and DS!

    (DS got a bit confused, and kept asking for more 'tarnas') hee hee.

    I couldn't get any Italian sausage mince anywhere, so resorted to peeling the sausages. Next time I will go into town and get some, there are a few good delis and butchers that I think would have it, within a half hour drive.
