Happy arvo to all & TIA

i just made a vanilla cake mix, put in cupcake tins, and then dropped 2-3 frozen blue/raspberries on top, bake 20-25 mins...and now have berry cupcakes waiting for me for afternoon tea...

Pikelets I know it's not technically baking, but they are great for yucky afternoons, simple to make and great for kids to help with!

This afternoon, when I can muster up the motivation again, I'm planning on making an apple & raspberry crumble for dessert tonight, double choc muffins and some pikelets.

Missy ... i gotta try your recipe soon (love a savoury muffin)

Even though i felt more like something sweet myself ... i ended up trying a recipe in the current FREE Winter Coles magazine (i pick my up near the checkouts)

There is some recipes in there under " Tempting Treats " for kids, ... today i made the Cheese & Chive Biscuits (they are ok but like a savoury shortbread, need a drink with them to wash 'em down). Last week i made the ** Pumpkin & Sultana Muffins ** (but i used Sweet Potato instead, i think pumpkin would be sweeter in the recipe so will try next time), they were a tad bland but DP & I reckon they would be so nice with a cream cheese sweet icing

along a similar thought to mbear's berry muffins/cupcakes...

simple vanilla cake packet, tin of tropical fruit salad in juice (i use golden circle 400ish grams) - either make muffins or a big cake (i do a loaf pan and a few muffins) - they come out golden but almost syrupish - yummmmmmmmmmmm

mmmmmm just finishing off some left over cake, recipe is:

    1/2C sultanas
    1TBSP golden syrup
    125g butter
    1/4C brown sugar
    2 large eggs
    vanilla essence
    2C SR flour
    1tspn bicarb soda
    2 very ripe bananas mashed

Method: Preheat oven to 180. Grease a 22cm cake tim & line with baking paper. Put sultanas in a saucepan, cover with water & simmer 5mins. Add golden syrup & set aside. Cream butter & sugar, add eggs & vanilla, beat well. Fold in sifted flour & bicarb soda with the sultanas & the bananas. Bake for approx 45mins. Leave 10mins before turning out on wire rack to cool. ****good with lemon icing****

this cake is so easy & yummy......very moist & I'm not a huge fan of sultanas but in this they are yum.

Next week I'm trying my fav, humming bird cake. Got a great recipe that uses bananas & a tin of fruit salad...sounds yummo.
