Question Feel like baking but what ?? ... Throw me your recipe ideas on this rainy day !!!

    Hello all,

I feel like baking something sweet or savoury on this rainy arvo in Ballarat with my 3 year old DD as the happy baking assistant

... Was thinking Anzac Biscuits so does anyone have a nice recipe of them (i like 'em a bit chewy in the middle)

Any ideas or suggestions please do throw them my way

Happy arvo to all & TIA

Cheers Lorelle & Cendrine (Miss C) xox

    cupcake holders ???

i just made a vanilla cake mix, put in cupcake tins, and then dropped 2-3 frozen blue/raspberries on top, bake 20-25 mins...and now have berry cupcakes waiting for me for afternoon tea...

Pikelets I know it's not technically baking, but they are great for yucky afternoons, simple to make and great for kids to help with!

This afternoon, when I can muster up the motivation again, I'm planning on making an apple & raspberry crumble for dessert tonight, double choc muffins and some pikelets.

mmmmmm just finishing off some left over cake, recipe is:

    1/2C sultanas
    1TBSP golden syrup
    125g butter
    1/4C brown sugar
    2 large eggs
    vanilla essence
    2C SR flour
    1tspn bicarb soda
    2 very ripe bananas mashed

Method: Preheat oven to 180. Grease a 22cm cake tim & line with baking paper. Put sultanas in a saucepan, cover with water & simmer 5mins. Add golden syrup & set aside. Cream butter & sugar, add eggs & vanilla, beat well. Fold in sifted flour & bicarb soda with the sultanas & the bananas. Bake for approx 45mins. Leave 10mins before turning out on wire rack to cool. ****good with lemon icing****

this cake is so easy & yummy......very moist & I'm not a huge fan of sultanas but in this they are yum.

Next week I'm trying my fav, humming bird cake. Got a great recipe that uses bananas & a tin of fruit salad...sounds yummo.

sorry, i just read your post...i hope they turned out okay - no strict rules.....2-3 berries, i usually fill the patty pans 3/4 (we dont have a very good oven....). Learn as you go i say......

Ohhhh and i did have 2 little helpers - and a very dirty kitchen floor afterwards, two messy little faces, and two tops that needed to be thrown in the washing machine straight away...so whilst they were delicious......it did make more work for me.....
