DS loves fish sticks and fish cakes you buy in the frozen section but I hate cooking them for him cause of preservatives andadditives in them............
I was wondering if any of you have a nice fish cake/fish stick recipe that make includes some vege's in them too??
I made some yummy Salmon cakes that Olivia just loved! All I did was mix a steamed salmon fillet in with some mashed potato, herbs and onion (you could grate some vegies or cheese into them too if you wanted to), then I crumbed them and gave them a little fry. She thought they were delicious
yep, same here. I made tuna cakes with mashed potato, herbs, onion, peas and corn and crumbed them, fried them and YUMMO beter than the frozen ones ANYDAY!
ETA: You can add prety much any vege in there, if you want them soft just boil/steam them beforehand, or just stir in raw vege with the fish and mashed potato if you prefer them crunchy.
500gm white fish (I asked the fish monger for good flaking fish that wasn't too fishy)
2 potatoes
1 carrot finely grated
1 med leek sliced in half and chopped finely (you could use spring onions or shallots as well...)
2 cloves garlic crushed
2 eggs
1 tsp salt
pepper
Cook the fish until it is just cooked. Cook the potatoes and mash them. Let them cool. Mix the rest of the ingrediants together. Heat 2 tbsp olive oil in a pan, form small rounds of the mix and pop it in. If the pan isn't hot, it won't form as nicely. If you find the mix is too mushy and not thick enough.... add some bran or wheat germ or something to soak up some of the moisture.
**Flavour**
If you want a thai fish cake you need more flavour than that above, so you can add;
1 tbsp soy sauce
1 tbsp sweet chilli sauce
1 tsp grated ginger
1 tbsp lime juice
1/4 cup bread crumbs or wheat germ
1 tbsp chopped coriander
