    the recipe as follows....

    Its from a yoga retreat website - I don't think I can post the link, but here's the recipe.... I just added chives and tasty cheese

    thanks for the inspiration ladies.... I didn't even know where to start and I really appreciate the suggestions... I've also bought dried fruit and nuts, and some apples and bananas...a few naughty snacks too... But I've tried..... Not really dinner... And I suspect DH will want us to stop somewhere anyway.... But it's a start.... My new life of making healthy choices.... Not for me, but for the little blob inside... And whether or not he/she sticks around, I am changing things right now...

    Pumpkin, parmesan and zucchini muffins




    Makes 10 regular muffins


    200g pumpkin – cook, drain and mash (could be baked and mashed for a richer taste)


    Combine in a large bowl
    - 2 cups SR flour
    - ½ tsp baking powder
    - 75 g grated parmesan


    Combine in a small bowl
    - Mashed pumpkin
    - 1 zucchini grated
    - 125g melted butter (or 100ml oil)


    Beat together
    - 1 egg
    - 200 ml milk
    Add to pumpkin mix.


    Fold all the wet ingredients into the flour mix until just combined. Spoon into muffin trays. Top with extra parmesan and sesame seeds. Bake at 190c for 35 minutes until a skewer comes out clean.

    Woo hoo congrats

    when travelling we tend to stick to subway and other places where they make it on the spot. As for healthy treats, well rice snacks those type things,

    I worry about subway cause you don't know how king the salad has sat there for?? I though you were supposed to avoid salad bars due to listeria?

    I avoid Subway like the plague. I've heard bad stories from people who've worked there. Stay away from anything with pre-made salad, or anything left out for hours. Stay away from anything with mayonnaise unless you buy the processed stuff from the store and put it on things yourself. So that means no coleslaw from Nando's or anything like that.

    A great little snack is carrot sticks and a jar of peanut butter. Protein and vitamins

    The bread you made looks fabulous.
