I'm pretty sure all purpose flour is just plain flour. No idea about hard flour though, i've never come across it.
I recently became addicted to making and baking in my kitchen!
With some of the recipes, it asks for all purpose flour ( I assume plain flour) and hard flour, which I can only assume is bread flour. Is hard flour bread flour?
Can someone explain flours to me?

All purpose is plain flour and hard flour is flour with a higher gluten content and is used in pizzas and breads.
That's interesting, I"m guessing hard flour = strong flour. KR, i thought the difference was that strong flour has more PROTEIN and that's why you get a better textured loaf when you're doing bread, pizza, etc.
On the topic of flour, do you baking guru's think it makes a difference if I use No Name Vs. a Brand Name? I am about to make a special cake, and I want it to be delish

What is the recipe for? Is it for bread? Or a Cake? Thats how I'd look at it. Anchor make flours specific to different recipes. And yes Hard flour is often high protein flour, like bread/pizza flourI have many many flours LOL and I will use my Anchor Bread/Pizza flour as hard flour.
I bake according to recipe as well, so I make pizza's again tonight and used pizza flour and I made pretzels earlier to day I used plain flour and pizza flour for that bready goodness...
