I remember that my sister had proper crumpet rings (they are deeper than egg rings). Really wish I had them right now.

I know the answer to this!!! They are a cross between a pancake batter (ie with baking powder) but they also have yeast in them.

ETA - Just me - I"m *very* impressed!!! Can we have your recipe please, so we can all try it??
    ahhh yes that makes sence!

I have always wondered this!!! Just me, it's cool you make your own! Do they taste like the store bought ones?
No, they aren't exactly like store bought ones. Probably similar to how homemade bread tastes different to bought bread.

I got my recipe from Hewy - I hate his show, but I was watching one day and they made them and they didn't look too hard. Here it is:

    Homemade Crumpets

    Ingredients:

    1/2 cup whole milk
    7g yeast
    1 1/2 teaspoons sugar
    1 1/2 cups plain flour
    1 - 2 pinches of salt
    1/2 cup coldwater
    1 1/2 teaspoons bi-carb soda
    butter for cooking

    Method:

    1. Warm milk on the stove - don't make it too hot, it will kill the yeast.
    2. When milk is luke warm, add yeast and sugar. Turn off heat and whisk the ingredients together.
    3. Cover with cling wrap and put off to the side until the mixture becomes frothy (approx. 10 mins).
    4. Sift flour and salt together.
    5. Add frothy yeast mixture and beat with a wooden spoon until combined.
    6. Once the dough is formed, cover with cling wrap and place in a warm spot to rise until doubled in size - approx. 1 hour.
    7. When dough has risen, mix cold water and bi-carb together (cold water from the fridge). Add to dough and stir until well combined.
    8. Grease some egg rings well and coat the base of the frying pan with butter over a low heat.
    9. Once the frying pan is heated, place the egg rings in, well spaced. Spoon 2 - 3 tablespoons of mixture into the egg rings.
    10. Cook over a very low heat until bubbles form on the surface. Turn crumpets and when cooked through remove from heat and serve bubble side up.

The bubbles on my crumpets are not overly distinct on the surface, but you can see the bubbles on the inside of them when you eat them. Also, the last time I made these, I did the whole first part in my bread maker on the dough setting (just chucked in all the ingredients except for the bi-carb and cold water) and continued from step 7. It was a lot quicker doing it in the bread maker and worked fine.

    Enjoy
