I use a heaped teaspoon of seeded mustard in my spag bol, lasagna and casseroles instead of wine. I found the tip on the internet and it really does add a bit of oomph to the flavour but it doesn't taste mustardy iykwim?
I never use wine in mine... and don't have a fixed recipe either!
I use about
600grams a mince
Can on tomatoes
Mushrooms
Othervegies, what ever is going really
Sometimes a Raguletto Venetcian herbs
onion or two
couple of cloves of garlic
Of course home made white sauce
Fresh basil on top - yummo!
Fresh Lasagne sheets from the fridge section, haven't used the boxed ones for years!
I find that from one packet I can get two large lasagnes. 4 sheets per lasagne, then put what is left in a zip lock bag and freeze, and defrost for next time!
Another tip along the lines of mustard - I always add a teaspoon of curry powder to my bolognaise sauce. Does the same as mustard, for me it just doesnt taste as good without it
I'd heard the curry powder tip too Freya. Haven't tried that one yet, mainly cos I'm not sure what sort of curry powder to use....what brand and type do you use?
I find a few tablespoons of Leggos sundried tomato pesto paste is good for rounding out the meat in lieu of the wine. Stephanie Alexander has an excellent veg lasagna too.
