The only time I use a recipe is for baking, everything else I just make up as I go or change things to suit us.
If there is a recipe that seems really nice just don't add the wine, you could add chicken or beef stock instead if you wanted or just nothing at al
At the moment I'm on here avoiding chopping up anything for the lasagne sauce to cook for my husbands b'day lol
I do quick ones which is basically my bolognese recipe cooked a little more but for his birthday I do the tarted up version.
Which is
Carrots, celery, zucchini, onions, garlic sweated down, Italian herbs, salt n pepper, pinch of nutmeg, brown off your mince, maybe a little bacon or italian sausages, cans of chopped tomatoes, bottle of tomato juice or passata, stock!
It really changes to suit what I have on hand and I add red wine if i have it here, taste's nice with or without it!
