Scatter them through muffins or cupcakes. If it's big ones, I love to snap them into bits and use them in place of chocolate chips.

OR Melt them together with cream and set with gelatine for a luscious chocolate mousse...

The small chocolate eggs are GREAT for chocolate chip cookies!

DS had a fundraiser for preschool and we pretty much just bought the whole box. So had quite alot left over. Used them in this choc chip cookie recipe..

    250g butter, softened
220g (1 cup) light brown sugar
250g (1½ cups) dark brown soft sugar
    2 eggs
    2 teaspoons vanilla essence
    2¼ cups plain flour
    1 cup self raising flour
    1½ teaspoons bicarbonate of soda
    3 teaspoons hot water
    ½ teaspoon salt
375g dark chocolate bits (or in my case cadbury choc eggs)

    1. Preheat oven to 180 C.
    2. Cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla essence.
    3. Dissolve bicarbonate of soda in hot water. Add to the mixture along with salt. Stir in flour and chocolate chips. Drop spoonfuls onto baking paper lined baking trays.
    4. Bake in the preheated oven for about 10 minutes, or until edges are nicely browned.

This makes up a HUGE batch so you can always half it, or do what i do and freeze half for a later date

I just smash them up and use them as I would choc bits. Did a huge batch of muffins and pikelets to get rid of the last of them.

Serve half an easter egg as a base for banana split. Yum.
