    Question Left over Lamb Roast

    Ok I'm in need of some ideas of what to do with leftover Roast Lamb Shoulder. I've cut all the meat away from the bone so its just in a container in the fridge.
    DH doesn't want Lamb and Gravy Rolls or sandwiches so now I'm really stuck with what to do with all this meat.

    So what do you do with your leftover meat???

    You could make shepards pie, or you could curry it..

    I love roast gravy rolls!

    Definitely Shepherd's Pie!
    Whiz it together in a food processor and fry some onions, carrots, celery.
    Make it up as you go!
    I'd throw in some peas, maybe tinned lentils or tomatoes to make it go further. Some worcestershire sauce for flavour? And top with mashed potato or a combo of potato/pumpkin? Dot with butter and bake.

    Serve with ketchup.....yummy......
    If I wasn't 40 + 1 I would get up off the couch tomorrow and make a roast just so I could have the pie after

    I'm sure there would be plenty of good recipes online.

    thats what we do here too and always look forward to the pie after lamb roast...........or soup after chicken roast x

    i always do a lamb salad with cherry tomatoes, spinach, cucumber, and Heinz Yoghurt Garlic Sauce YUMMO!

    OR

    Grab the Ainsley's Citrus Couscous pack and make as per the instructions on the back (I omit the onion) and then add the lamb to that. It is yummy!

    You can freeze it. Then defrost for roast rolls.
    Cottage pie, stew
    Umm, lamb wraps and salad?
    Um kebabs?

    Chuck it on home made pizza! YUM! You can change the flavour a bit by spreading a bit of pesto on the base, add the lamb, some fresh tomato, basil, feta, & olives - instant greek pizza!

    Or sprinkle some morrocan seasoning on the lamb, add caramelised onion, and a sprinkle of cheese. After it's cooked, spread on some rocket & mint/yoghurt sauce (fresh finely chopped or pureed mint is best, but if you already have some mint jelly or sauce, mix it with natural yoghurt). That's one of my favourite pizzas at our local pub.

    I must admit, I am a stranger to left over lamb roast. DH devours it before I even know it exists.

    Mmmmm Judds's pizzas... a reason to visit Kalgoorlie! My fave was the satay chicken one or the Diana Ross Mmmmmm!

    My new fave thing to do with leftover roast is mini pies in a muffin tin. It's so quick and simple cos the meat is already cooked and tender. Fry off an onion and a few garlic cloves with mushrooms, bacon or whatever you fancy. Chuck in the meat (flour it a little) add some wine and a dash of cream, salt, pepper and fresh herbs. Cut puff pastry sheets into quarters and line the tin, spoon in filling then fold pastry over and stab with a fork. Voila!

    YAY!! someone who remembers the 'old names' for their pizzas! I've forgotten what Diana Ross was, but my favs are the Moroccan Lamb (forgotten the old name...), Gift of the Gav (chicken, cream cheese, tomato, red onion & bacon), and Ghandi (satay chicken). I also loved the TexMex (nachos on pizza - there is no yummier evil!), but they don't do that one anymore.
