    Chuck it on home made pizza! YUM! You can change the flavour a bit by spreading a bit of pesto on the base, add the lamb, some fresh tomato, basil, feta, & olives - instant greek pizza!

    Or sprinkle some morrocan seasoning on the lamb, add caramelised onion, and a sprinkle of cheese. After it's cooked, spread on some rocket & mint/yoghurt sauce (fresh finely chopped or pureed mint is best, but if you already have some mint jelly or sauce, mix it with natural yoghurt). That's one of my favourite pizzas at our local pub.

    I must admit, I am a stranger to left over lamb roast. DH devours it before I even know it exists.

    Mmmmm Judds's pizzas... a reason to visit Kalgoorlie! My fave was the satay chicken one or the Diana Ross Mmmmmm!

    My new fave thing to do with leftover roast is mini pies in a muffin tin. It's so quick and simple cos the meat is already cooked and tender. Fry off an onion and a few garlic cloves with mushrooms, bacon or whatever you fancy. Chuck in the meat (flour it a little) add some wine and a dash of cream, salt, pepper and fresh herbs. Cut puff pastry sheets into quarters and line the tin, spoon in filling then fold pastry over and stab with a fork. Voila!

    YAY!! someone who remembers the 'old names' for their pizzas! I've forgotten what Diana Ross was, but my favs are the Moroccan Lamb (forgotten the old name...), Gift of the Gav (chicken, cream cheese, tomato, red onion & bacon), and Ghandi (satay chicken). I also loved the TexMex (nachos on pizza - there is no yummier evil!), but they don't do that one anymore.

    I have left over roast lamb in my fridge at the moment so I have had yummy greek salads with lamb for lunch the last 2 days.

    I just cut up a lebanese cucumber, a few cherry tomatoes, some marinated feta, kalamata olives, green or red capsicum, lettuce leaves (optional) and a few cubes of roast lamb ... really good!!! The marinade on the feta is usually enough of a dressing for me but you could add greek salad dressing if you like.

    The possibilities for left over roast lamb are endless. Enjoy

    You must use the bone to make soup! If you want to, use some bits of meat in there too, make up a lovely minestrone or barley soup, awesome for winter!
    For a barley soup, fry off carrot and celery, then add your lamb bits and bone, barley and cover with heaps of stock. Bring to the boil and simmer at a good pace for 90 mins. The bone will add extra calcium to your soup, and the barley gluten sort of thickens it up and makes it all hearty. Yum.

    Would the vegans kill me if I said I miss cooking with animal bones?

    We make fritters with ours sometimes. You just slice the lamb off the bone and then make a batter as you would for pancakes, omitting the sugar, and then coat each slice of lamb in the batter and lightly fry in a pan on each side till golden. Soooooooo yummy!

    Pretty much the same here, except I tend to dice the meat and sometimes throw in some leftover chopped veg as well. Everyone here loves it!
