um...
i sometimes add some ricotta with the mashed sweet potato and put it through pasta for ds and he loves it.
you could put it on top of a pie instead of regular potato (shepards pie like)
you could layer it in a lasagna to up the vege content
thats all i can think of at the moment, will keep thinking.
could you just frezze it for later? or just have it tomorrow on its own with some griled meat?
