    Question Mini quiche recipes ... Need your ideas !!

    Hello all,

    I've never made Mini Quiches ... So how do YOU make them ?? ... and What are your Favourite recipes ??

    (I especially like quiches with ingredients such as ... creamed corn, corn kernels, spring onions, mushrooms, spinach & rosemary herb )

    I'm up for any suggestions ... and your best cooking tips (especially in regards to the pastry)

    i found a yum one when i googled

    puff pastry for the base - i just used a kitchen glass to cut them to size, line mini cupcake pan thingy...

    get 1 cup each of canned corn, chopped BBQ chicken (the ones you buy hot from Woolies and Coles) and grated cheese. Share evenly between quiches (i dint' mix them together before hand, just kind of layered them with the cheese on top of the corn and chicken). Then beat 1-2 eggs (don't remember it having milk at all in it), and pour that on top, leaving a little bit of room for it to rise. Chuck them in the oven at 180 for i think 10-12 minutes (could be wrong here, maybe just don't forget about them, and keep checking them) until golden brown. Enjoy!

    I made them for a Christmas party, and everyone LOVED them. The pastry puffs up, the egg puffs up, and the cheese kinda poked his little head through the egg topping too. Soooooooo yummy!

    When you make your egg mix, use cream, not milk and dont be afraid to use a lot of cream to the amount of eggs. Makes a creamier and smoother texture and not so eggy.
    Asparagus, tomato, ham, blue cheese, peas are all good too.
    If you use spinach, and cook it before hand, make sure yu let it cool and them squeeze the hell out of it to get rid of the excess water, otherwise your mix will never set and if it does it will be slimey and watery.
    I use shortcrust pastry and put it in cupcake pans to cook in. The trick is low and slow...cook them at about 170C, they may take a while, but they will be less dry.
