    i have made this one it's great

    Melt and mix banana bread ( i add choc drops)

    55g (1/4 cup) firmly packed brown sugar
    30g (1/4 cup) almonds, chopped
    375ml sour cream
    1 tsp bicarbonate of soda
    125g unsalted butter, melted
    1 cup caster sugar
    2 eggs, lightly beaten
    1 3/4 cups plain flour
    1 tsp baking powder
    1 tsp ground cinnamon
    2 ripe bananas, mashed

    Preheat oven to 180C. Grease and line two 10 x 18cm loaf tins with baking paper. In a bowl, mix together the brown sugar and almonds and put aside.

    In a large bowl, mix together the sour cream and bicarbonate of soda, set aside for 5 minutes then stir in the melted butter, sugar and eggs. In another bowl, combine the flour, baking powder and cinnamon. Gradually fold in the sour cream mixture, followed by the bananas.

    Pour the mixture equally into the prepared tins and sprinkle the brown sugar mixture on top.

    Bake for 1-11/2 hours or until a skewer comes out clean. Set aside and cool in tins for about 20 minutes before turning out onto a wire rack to cool completely

    This is a very simple recipe...

    1 cup self raising flour
    1 cup sugar
    1 cup coconut
    1 cup milk
    2 mashed banana's

    Mix it all together and bake till golden brown

    it is a very very wet mixture.. Makes nice muffins too with a few choc chip in it

    (extra tip ~ replace the bananas with 2 apples very well drained after cooking and you have apple muffins)

    Thanks ladies! I'm going to write these down. I have just finished baking my banana bread!! I actually used one with golden syrup (to use it up!) and no milk so i'll see how this one turns out.... it's a very wet mixture also. can't wait til it's finished!

    I made your recipe today Nic and it is YUMMO! I made them into muffins with choc bits in them I used Cadbury chocolate and they are ooooohhh so yummy!

    This easy a great recipe - easy as, pretty low fat, and oh so yummy!

    Preparation Time 15 minutes

    Cooking Time 50 minutes

    Makes 1 loaf

    Ingredients (serves 10)Melted low-fat dairy spread, to grease
    265g (1 3/4 cups) self-raising flour
    40g (1/4 cup) plain flour
    1 tsp ground cinnamon
    140g (2/3 cup, firmly packed) brown sugar
    125ml (1/2 cup) skim milk
    2 eggs, lightly whisked
    50g butter, melted, cooled
    2 overripe medium bananas, mashed

    Method
    Preheat oven to 180?C. Brush an 11 x 21cm (base measurement) loaf pan with melted dairy spread to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

    Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre. Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.

    Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.

    Notes & tips
    This banana bread will keep in an airtight container out of direct sunlight for up to 3 days. Alternatively, place in an airtight container, then label, date and freeze for up to 1 month. Place in the fridge overnight to thaw.
