    Question Need a yummy "Banana Bread" recipe please!!

    I've had a look through the recipe threads but can't seem to find one..... anyone got a great plain old Banana Bread recipe they would like to share?

    Want to get some ingredients on the way home to bake it for the weekend!! MMmmmm.

    Not quite so plain as it's got walnuts in it, but super yummy!
    I was craving it last week and pretty much polished off the whole loaf on my own!!
    No wonder I had to go out and buy new pants today lol!!

    Banana Walnut Bread

    Ingredients
    ? 300g (2 cups) self-raising flour
    ? 70g (1/3 cup, firmly packed) brown sugar
    ? 100g walnuts, coarsely chopped
    ? 1 tsp bicarbonate of soda
    ? 2 eggs, lightly whisked
    ? 250ml (1 cup) milk
    ? 1 cup (about 2 large) mashed banana
    Method
    1. Preheat oven to 180?C. Line the base and sides of a 6cm-deep, 20 x 10cm loaf pan with non-stick baking paper.
    2. Sift the flour into a large bowl. Add the sugar, walnuts and bicarbonate of soda, and stir to combine.
    3. Add the egg, milk and banana, and gently fold until well combined. Spoon the mixture into the lined pan. Bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean. Set aside to cool completely. Cut into slices to serve.

    i have made this one it's great

    Melt and mix banana bread ( i add choc drops)

    55g (1/4 cup) firmly packed brown sugar
    30g (1/4 cup) almonds, chopped
    375ml sour cream
    1 tsp bicarbonate of soda
    125g unsalted butter, melted
    1 cup caster sugar
    2 eggs, lightly beaten
    1 3/4 cups plain flour
    1 tsp baking powder
    1 tsp ground cinnamon
    2 ripe bananas, mashed

    Preheat oven to 180C. Grease and line two 10 x 18cm loaf tins with baking paper. In a bowl, mix together the brown sugar and almonds and put aside.

    In a large bowl, mix together the sour cream and bicarbonate of soda, set aside for 5 minutes then stir in the melted butter, sugar and eggs. In another bowl, combine the flour, baking powder and cinnamon. Gradually fold in the sour cream mixture, followed by the bananas.

    Pour the mixture equally into the prepared tins and sprinkle the brown sugar mixture on top.

    Bake for 1-11/2 hours or until a skewer comes out clean. Set aside and cool in tins for about 20 minutes before turning out onto a wire rack to cool completely

    This is a very simple recipe...

    1 cup self raising flour
    1 cup sugar
    1 cup coconut
    1 cup milk
    2 mashed banana's

    Mix it all together and bake till golden brown

    it is a very very wet mixture.. Makes nice muffins too with a few choc chip in it

    (extra tip ~ replace the bananas with 2 apples very well drained after cooking and you have apple muffins)

    Thanks ladies! I'm going to write these down. I have just finished baking my banana bread!! I actually used one with golden syrup (to use it up!) and no milk so i'll see how this one turns out.... it's a very wet mixture also. can't wait til it's finished!
